My main prep station is a John Boos Maple Cutting Board. Use this one for meal prep, breaking down ingredients, and to keep your kitchen looking sharp. Keep a separate board for raw protein, more on that below.
Mine is always on the countertop, clean, and ready to go. You'll want to apply some Mystery Oil about once every year to keep it from drying out. Never put it in the dishwasher & avoid using serrated knives on it.

Plastic Cutting Board
Prep Meat & Fish
Raw chicken, fish, and beef should never be on the same cutting board as ingredients that won't be cooked. Therefore pick up a cheap plastic cutting board for cutting meat and grab your preferred knife.
Measure the cabinet/drawer where you plan to keep it, and get a slightly smaller size. Thirteen Chefs makes a variety of colors & sizes. I dig my black 18" x 12".
